Grain free Chocolate chip cookies

It's been a long time since I posted anything in this blog. But I do cook, share clicks and recipes through email and whatsapp to people who are looking for it. Because it is easier to click with a phone and share it instantly no matter how the photo looks. So excuse me for the photos, but I am sure the recipe will be of interest to you. If you are looking for a gluten free, refined sugar free recipe then you should try this. You will not be disappointed.

Cooking Time - 13 - 15 Minutes

Preparation Time - 10 Minutes

Makes - Around 18 - 22 Cookies depending on the size

Ingredients

Blanched almond flour(honeyville) - 2 Cups
Baking powder  - 1 Tsp
Salt - 1/8 Tsp
Vanilla extract - 1 Tsp
Melted butter - 1/4 Cup
Milk - 1/4 Cup
Coconut sugar - 1/3 Cup
Hershey's sugar free chocolate chip cookies - 1/4 Cup

Method

1) Add all the dry ingredients in a bowl, the almond flour, baking powder, salt, coconut sugar and mix well.

2) To the dry ingredients add the chocolate chips, vanilla extract, melted butter and milk little by little as needed to roll out a dough. Refrigerate for 30 minutes.

3) After 30 minutes, preheat the oven to 350 Degrees Fahrenheit.

4) Line cookie tray/trays with parchment paper, grease your hand make small balls of the cookie dough around 18-20. Place the balls in the parchment paper and flatten them with your palms.  Equally space the cookies in the baking tray and bake for 12 minutes till the cookies are slightly browned.

5) Remove the cookie tray and gently transfer the cookies to a cooling rack. Once cooled completely transfer to an airtight container.

Almond Flour Carob Chip Cookies

Do you or any body in your  house hold  have any food allergies or do you or any one in the house hold go through any kind of elimination diet?  If so you can really understand how difficult it is find out alternate cooking ingredients, if not you should be happy and feel really blessed.  Gluten is the binding agent in lot of baked products. But if this needs to be substituted with a gluten free ingredient there are various possible substitutions like rice flour, tapioca and potato flour. But almond flour is one of the best and very tasty substitute in case you don’t include gluten in your diet.  Along with almond flour, I have used carob chips, maple syrup and coconut oil as the fat in making this cookie. A delicious after school snacks for the kids. If you do not include gluten in your diet, what do you use as a substitute? Would love to hear about it.

Carob is an evergreen plant native to the Mediterranean region. Carob chips are made out of carob powder. They are similar in appearance and texture to chocolate chips, although the taste is distinctly different from that of chocolate. Carob is a naturally sweet substance, so there is generally no sugar added to the chips during manufacture. Carob chips also lack the stimulants caffeine and theobromine found in chocolate.

Even though maple syrup is a safe alternate to refined sugar, if you are on a low fructose diet or diabetic diet this is not the sweetener for you.

Preparation Time – 10 Minutes

Cooking/Baking Time – 12-13 Minutes

Serves – Makes 24 Cookies

Ingredients

Blanched super fine almond flour – 2 Cups

Maple Syrup – 1/3 Cup

Carob Chips – 1/3 Cup

Baking Soda – 1/2 Tsp

Coconut oil – 1/4 Cup Solid and melted to yield approximately 1/3 Cup

Vanilla extract – 1/2 Tsp

Salt – pinch

Method

1) Preheat baking oven and line two cookie trays with parchment paper.

2) In a wide bowl add the almond flour, salt, baking soda and carob chips.

3) To this add maple syrup, warm coconut oil and vanilla extract and using a spatula combine well.

4) Make 24 equal sized balls and take each ball and place them in the baking tray and slightly press to form a patty shape.

5) Bake for 10-12 minutes until slightly browed and remove from heat.

6) Leave the cookie in the baking tray for few minutes and  then cool in a wire rack before transferring to an airtight container.

7) Keeps good for at least 6-7 days at room temperature.

Vegan Oats & Almond Meal Coconut Raisin Cookies

If you include grains like Oats, you should definitely try this cookie out. With Oats, Almond Meal, Coconut, Raisin, Maple Syrup these cookies are absolutely delicious. I used to make these cookies frequently before oats, wheat & barley were eliminated from our house hold. I still continue to make these for people who eat this high fiber grain and baking couple of batches to be put in gift boxes to be distributed for the New Year. Cooking Time - 15 minutes

Preparation Time - 10 minutes

Yields - Around 20-24 Cookies depending on the size






Ingredients



Oats Flour  - 1 1/4 Cup(Grind 1 1/4 Cup of Oats into a fine flour in a food processor)

Quick Cooking Oats – 1 Cup

Almonds - 1 cup

Maple Syrup - 1/2 cup

Coconut Oil – 1/3 Cup

Thawed grated coconut – 1/2 Cup

Raisins – 1/3 Cup

Salt - 1/2 tsp

Baking Soda – 1/2 Tsp

Cinnamon powder - 1/2 tsp





Method





1) Place the almonds in a food processor and grind into a a coarse meal

2) Combine the Oats flour , Almond and the rest of the Oats, Salt, baking soda and Cinnamon powder.

3) Add Oil, Maple syrup, grated coconut , raisins and  mix thoroughly to form a dough.

4) If the dough is very sticky chill in the refrigerator for 5 minutes, if the dough is dry add little bit of more oil. Because I used coconut from the freezer, it had a little bit of moisture content which will help to bind the flour. So depending what type of coconut you are using adjust the dough.

5) Preheat Oven to 350 Degrees Fahrenheit and line a cookie tray with parchment paper.

6) Roll the dough into small balls and flatten them in your hand and place them in the cookie tray one after another leaving enough space between the cookies as they will expand.

7) Bake for 10-15 minutes until well baked, they get baked quickly so keep a watch on them otherwise you will get brown or burnt cookies.

8) Cool them and transfer to a airtight container.

Sugar free Almond Flour Cookies(Gluten, Grain & Egg free)

I make cookies only with Almond Flour nowadays for my family,  they are not alone gluten, grain free but also high in protein and very nutritious. But you will still see some cookies with whole wheat, oats etc in future posts which were all done in my earlier attempt few years back and which I still bake for people who are on a nut free diet.  In all my almond flour cookie recipes I use maple syrup as sweetener which is all natural and doesn’t cause cavities like sugar does. So they are safe for dental health but still they are sweetener which will increase blood sugar for people with diabetes. So I tried using Stevia and Xylitol as the sweetening agent couple of times before I nailed down this recipe. Stevia definitely had an after taste and with xylitol the taste was good but with almond flour which is gluten free and no eggs, the cookie didn’t have a structure and was all crumbly.  Bean flours are used as binding agent in lot of gluten free cooking and taking that as an inspiration, I tried to combine almond flour and split chick pea flour(besan) with xylitol and the cookie was much better than the stevia and the earlier xylitol version. If you are on a low glycemic diet do try this one out and do let me know how you liked it.

Preparation Time – 10 Minutes

Cooking Time – 10 to 12 Minutes

Makes Around – 10 to 12 Cookies

Ingredients

Almond flour - 1/2 Cup

Besan(Split Chick Pea flour) - 1/3 Cup

Vanilla extract - 1/4 tsp (Saffron & cardamom, Cinnamom, Cardamom & Rose Water, Orange extract & Orange rind are the different flavors I tried and liked them all)

Xlitol powdered - 1/4 cup

Clarified butter - 1/4 cup

Baking Soda – pinch

Salt – pinch

Almond flakes – 1 Tbsp

Method

1)  Combine the almond flour, split chick pea flour, powdered xylitol, baking soda and salt.

2) To this add vanilla extract and clarified butter and make a smooth dough.

3) Preheat an oven to 350 degree Fahrehiet and line a cookie tray with parchment paper.

4) Make 10 to 12 equal sized balls out of the cookie dough and with your hands press them gently into flat balls and place them with equal distance in the baking tray. Take some flaked almonds in your hand and gently top each cookie with few flakes and press with your finger so that the flakes touch the dough and hold on without falling.

5) Bake for 10-12 minutes till the cookies are slightly browned, remove the tray and let it sit out for 2-3 minutes and then remove the cookies and cool in a wire rack.

6) Store in an airtight container once completely cooled and keeps good at room temperature for 4-5 days.

Almond Flour Coconut, Cashew Cookies(Gluten, Grain, Egg Free)

Cookies are definitely a must in after school snacks along with some protein rich nuts, veggies, fruits and a glass of milk in my household. It is been a while since my kids touched store bought cookies, so I have to make them something interesting each week. This time I decided to add some coconut to the cookie flour and they were so good. Made with protein rich almond flour, casein free clarified butter, coconut and studded with cashew, these are very easy to make and tastes absolutely delicious. I know this is the time of season to bake all different kinds of cookies and cakes. So if you are looking for a gluten free and a delicious and healthy cookie, do try this out  and let me know how you liked them.

Maple syrup is all natural and is taken out of tree sap and doesn’t cause any cavities like sugar, so between sugar and maple syrup the latter is a definitely a better choice. But if you are looking for a sweetener which will not elevate blood sugar xylitol and stevia are the best choice of natural sweeteners.

Preparation Time – 10 Minutes

Cooking Time – 12-15 Minutes

Serves – Makes around 30 Cookies depending on the size

Ingredients

Almond flour - 3 Cups

Coconut - 1/2 Cup (Grated, frozen, thawed to room temperature)

Maple syrup - 1/2 Cup

Clarified Butter(Ghee) - 1/3 cup

Baking soda - 1/2 Tsp

Salt – 1/4 Tsp

Vanilla extract – 1/4 Tsp

Cashews - 30

Method

1) Combine almond flour, baking soda, salt, to this add maple syrup, clarified butter, vanilla extract, grated coconut and make the cookie dough.

2) If you think the cookie dough is too sticky to handle refrigerate for 10 minutes(not more than that).

3) Preheat oven to 350 Degrees Fahrenheit and line cookie sheets with parchment paper.

4) Take out the cookie dough and make 30 equal sized balls and press them gently to form a circle, on top of it stud with a cashew.

5) Bake for 12-15 Minutes till cookies are slightly browned and baked. Cool in a wire rack and store in an airtight container. Holds good for 4 to 5 days at room temperature.almondflourcoconutcookies1

Eggless Whole Wheat Chocolate Chip Cookies

But they are any time better than the store bought one with no preservatives and additives.I have been baking these chocolate chip cookies for a long time and continue to bake them when I have to do a nut free baking.  This is the recipe which you can find in the Nestle Chocolate Chip Bags and I just substituted with whole wheat instead of refined flour and raw sugar instead of white sugar and are egg free. Personally I prefer my Almond Flour Chocolate chip cookies over these but I had to make these for some body who is allergic to nuts. So if you are looking for a chocolate chip cookie recipe to bake this holiday season do try out this one and do let me know how you liked them.


Preparation Time – 10 Minutes

Cooking Time – 25-30 Minutes(10 – 12 Minutes for each batch)

Serves – Makes around 3 1/2 Dozen Cookies



Ingredients



Whole Wheat Flour – 2 1/4 Cup (The original recipe used All purpose flour)

Butter – 1 Cup(2 Sticks)

Raw sugar – 3/4 Cup(Original used 3/4 Cup White Sugar + 3/4 Cup Light brown sugar)

Semi sweet chocolate chips – 1 Cup

Vanilla extract – 1 Tsp

Baking Soda – 1 Tsp

Salt – 1/4 Tsp(1/2 Tsp if using 1 1/2 Cups sugar as per original recipe)

Warm Water – 3 Tbsp

Ener-g egg replacer or Corn flour – 3 Tsp



Method





1) Beat the ener-g egg replacer by adding the warm water till frothy and keep it aside.



2) Beat the butter till creamy, add the sugar, egg replacer + water, vanilla essence and keep it aside.



3) Combine the whole wheat flour, baking soda, salt, chocolate chips and add it slowly to the wet mixture and combine thoroughly.



4) Preheat a baking oven to 350 Degree Fahrenheit and like cookie trays with parchment paper.



5) Take the cookie dough with an ice cream scoop or a spoon and spoon out equally with enough distance between each of them. Slightly flatten the cookie dough with your fingers after spooning.



6) Bake for 10-12 minutes till the cookies are completely baked. Cool in a wire rack and store in a airtight container.



Note – The original recipe called for 1 1/2 cups of sugar and I halved it and with 1 cup of chocolate chips this sweetness was good enough. But if you have a sweet tooth, then stick on to the original recipe of 1 1/2 cups and also you can add 1 cup of chopped nuts to cookie dough. Because the kid for whom I was baking had nuts allergy, I couldn’t add any nuts.

Almond Flour Chocolate Chip Cookies (Egg free, Gluten free & Grain free)

 Cookies and milk, what can be a perfect snack after school?  I wouldn't boast chocolate chip cookie as a super health food.  But how much can you restrict kids not to eat this and that. For my kids I no longer give any store bought treats like cookies or bars. Everything is made at home, so when my elder one wanted me to make chocolate chip cookies. I didn't have the heart to deny that. So I came up with this recipe using Almond flour which is high in protein, no gluten and grain, maple syrup at least doesn't cause cavities. Almond flour gives such a nutty taste and texture to the cookie and are so good for people who are on gluten and grain free diet. So try this out and let me know how you like it.



If you are diabetic, this recipe is not for you. The bad part in this is the chocolate chips and also maple syrup even though it is a much better alternate than sugar, has a high fructose content and may elevate blood sugar. Stevia and Xylitol are the best natural sweetener to eliminate sugar highs and lows. Will post a recipe soon with Almond flour and Xylitol, so keep visiting.





Preparation Time - 10 Minutes

Cooking Time - 12-15 Minutes

Serves - 24 Cookies





Ingredients



Blanched Almond Flour - 2 Cups

Maple Syrup - 1/3 Cup

Baking Chocolate Chips - 1/3 Cup

Clarified Butter (ghee) - 1/4 Cup

Baking Soda - 1/2 Tsp

Salt - 1/8 Tsp



Method



1)  Preheat a baking oven to 350 Degrees Fahrenheit and line two cookies trays with parchment paper.



2) Combine the almond flour, baking soda, salt and mix evenly. Now add the clarified butter, maple syrup and chocolate chips. Knead into a fine dough.



3) Pinch out 24 even sized balls and place them in the parchment paper and press them gently.



4) Bake for 12-15 Minutes till slightly brown. Cool in a wire rack and store in a airtight container.

Keeps good for at least a week in room temperature.

Whole Wheat & Oats Digestive Cookies/Biscuits





 Do you like the taste of digestive biscuits? Then you should try this. These taste so good and a much healthier choice than store bought one made with partially hydrogenated oil or high fructose corn syrup. But if you are on a grain free diet or gluten free diet these cookies are not for you.



I made this cookie recipe an year and half before ( a long time) before gluten was eliminated from our diet. Now a days I use only Almond flour for any kind of cookies. Even though I don't make them now, you will still continue to see quite a few of my recipes made with flours containing gluten like wheat. The simple reason is I have couple of them lying in drafts and this will be useful for people who still use whole wheat and oats in their diet.



Preparation Time - 15 Minutes

Cooking Time - 15 Minutes

Makes - Around 24 Cookies





Ingredients



Whole Wheat Flour - 1 Cup

Oats - 1 1/2 Cups

Baking Powder - 1 Tsp

Butter - 1 Stick (1/2 Cup at room temperature)

Salt - 1/4 Tsp

Raw Sugar - 1/4 Cup(Increase this to your taste, but normally digestive biscuits are a tad less sweeter)

Milk - 2 Tbsp (if needed)



Method



1) Grind the oats in your food processor to a powder form.



2) Combine the whole wheat flour, oats flour, baking powder, salt and raw sugar. Mix them evenly.



3) To this add the butter stick and form a dough. If the dough is too thick then add 1 to 2 Tbsp of Milk. Roll this dough into a cylindrical shape and wrap them with parchment paper and keep them in the refrigerator for 15 minutes. Do not keep this for more than 15 Minutes else it will be rock hard.



4) Preheat the oven to 350 Degrees Fahrenheit and line two cookie trays with a parchment paper.

Take out the dough and cut them into even circles and place them in the cookie tray and bake for 15 Minutes.

I poked few holes using a fork.



5) Cool them in a wire rack and enjoy with some hot tea or store in an Airtight container.

Almond Flour Crisscross (Egg Free, Gluten & Grain Free)

 If you are looking for gluten free, grain free baking alternate, Almond flour is the best choice taste wise as well as nutrition wise. Very low in carbohydrates and high in protein and with a sweet nutty taste, they give a great taste to the baked goods. If you are on a gluten free diet and have tried out all the gluten free flours like rice, bean flour etc. You will know what I am talking about. In fact, this is the only flour I use now a days for making different kinds of cookies for my kids.



Even though maple syrup is much healthier alternate than refined sugar and don't cause cavities like sugar. For people with diabetes, maple syrup because of its fructose content is not the recommended sweetener.

This recipe is so simple to make, please do try out and let me know.



Preparation Time - 5 Minutes

Cooking Time - 10 - 12 Minutes

Makes - Around 20-24 Cookies





Ingredients



Almond Flour - 2 cups
Maple syrup - 1/2 cup
Melted Clarified Butter(Ghee) - 2 oz
Baking soda - 1/2 tsp
Salt pinch
Vanilla extract few drops


Method



1) Combine Almond flour, baking soda and salt.



2) To this add the melted clarified butter, maple syrup and vanilla extract.



3) Combine thoroughly and make a dough and at this point it will be very sticky. Refrigerate for 30 minutes or just leave it in the freezer for 5-10 minutes so that the dough is easy to handle and not sticky.



4) Preheat the oven to 350 degrees Fahrenheit and line two cookie trays with parchment paper.



5) Pinch out 20-24 small sized balls with even sizes out of the cookie dough and with center of your palm, roll them to make perfect shaped balls and place them in baking tray with enough space between each one



6) Flatten them slightly and using a fork press each one of the cookie to form a criss cross pattern and bake for 10 to 12 minutes till they are slightly brown.



7) Remove them and cool them in a wire rack and store in a airtight container. This keep good in room temperature for at least a week.(Haven't lasted more than a week, even though I make double batch most of the times).

Eggless Almond Flour Scones(Grain & Sugar free)



Almond Flour is a blessing for people on a gluten free and grain free diet. Even though the texture of the baked goods can't be compared with the  one's made out of regular refined flour or wheat flour. I feel the taste is incomparable with a nutty flavor and taste. Best of all too good for your body with high protein and low carbohydrate. I made these scones  for a evening snack and we had a few right away as they do taste the best when taken fresh out of the oven.



Preparation Time - 5-10 Minutes

Cooking Time - 10-15 Minutes

Serves - Makes 8 Scones



Ingredients



Almond Flour - 1 Cup

Clarified Butter - 1 Tbsp(Ghee) (If you increase this quantity cut down the quantity of water)

Xylitol - 2 Tbsp or more to taste(You can use maple syrup but cut down on the water and add 1/2 Tsp of baking soda)

Powdered Chia - 1 1/2 Tbsp

Vanilla extract - 1/2 Tsp

Salt - 1/8 Tsp

Water



Chopped Pecans - 1 Tbsp

Raisins or Cranberries - 1 Tbsp(Cranberries taste much better than raisin . Chocolate chips, chopped dates, apricots, dried cherries options are unlimited)



Method



1) Combine Almond flour, Xylitol, salt, powdered chia,  well with your hands.



2) To this add pecans, raisins, melted clarified butter, vanilla extract and add water little by little kneading this into a stiff dough.



3) Preheat oven to 375 Degrees Fahrenheit and line a cookie tray with parchment paper.



4) Make a circle and flatten them with your hand slice them across and make 8 parts out of each circle using a pizza cutter and them arrange each of the scone with enough spacing between and bake for 10-15 Minutes till the top browns.



5) Cool them in a wire rack for few minutes 5 to 10 minutes and serve them warm with butter, fruit preserves or as it is.



Note - You can substitute Xylitol with maple syrup and if using maple syrup cut down the water and also add half tsp of baking soda.

Eggless OatMeal & Whole Wheat Cranberry Cookies

If you are do include Wheat and Oats in your diet, you should definitely try this one. Absolutely tasty and you can't taste the whole wheat flour at all in this cookie. I came across this recipe in the Quaker Oats Container and made few modifications, like replacing the eggs with ener-g egg replacer and substituting Whole wheat flour instead of all purpose flour and also omitting the white chocolate chip cookies. With sweet and tart taste of cranberries and with the texture of Oats and the raw sugar, they taste just perfect. Do try this out and let me know how it turned out.



Gluten is a special type of protein that is commonly found in wheat, barley, rye, kamut, spelt and triticale. So if you are sensitive to gluten this recipe is not for you.





Preparation Time - 10 Minutes

Cooking Time - 15 Minutes

Serves





Ingredients



Butter - 2/3 Cup

Raw Sugar - 2/3 Cup

Ener-g Egg Replacer - (3 Tsp + 2 Tbsp Warm Water)

Old Fashioned Quaker Oats - 1 1/2 Cups

Whole Wheat Flour - 1 1/2 Cups

Baking Soda - 1 Tsp

Salt - 1/2 Tsp

Dried Cranberries (Sweetened with fruit juice) - 1/2 Cup



Method



1) Beat the Ener-g Egg replacer with the warm water till frothy.



2) Cream the butter and sugar and then add the ener-g and water mixture.



3) Combine the whole wheat flour, oats, baking soda, salt and dried cranberries.



4) Preheat oven to 350 degrees Fahrenheit and line a cookie tray with parchment paper.



5) Now add the dry ingredients to the wet mixture and combine with your hands to form a dough.



6)  Place small amount of dough(a small ball sized) in the parchment paper and  flatten them using your hand.



7) Leave enough space as the cookies will expand while baking and bake for 10-15 minutes till they are completely baked.



8) Cool in a wire rack and transfer to a airtight container. Keeps well at temperature for at least a week.



Notes - I left out the chocolate chips, so if you have sweet tooth, add more sugar instead of the sweetness of the chocolate chips. When you are adding more sugar, you might need to add little more of water to hold the dough, so add in small amounts and see. You can also add little bit of milk instead of water but the cookies will become very soft. If  you don't have ener-g egg replacer, replace it with corn starch and corn starch will give a very crunchy cookies.

Almond Flour Sesame Cookies

In my house we are almost gluten free and going kind of grain free too. But you will continue to see recipes with gluten and grain, because I have atleast a hundred sitting in my drafts. After going Gluten free, the first step one would look for is Gluten free flours like bean flours, I did try them and will also post it soon. But personally I didn't like the taste of bean flours. So when going through the other options, I landed in Elana's Gluten Free Sesame Cookies . This was my first try using Almond flour few months back and we all just loved it.  I bake all different kind of cookies now with Almond flour and with my own combinations and own recipes and will post them soon.

But getting on to this easy and delicious recipe, except for few variations given below I pretty much sticked on to the original recipe. I don't use Agave Nectar and substituted it with Maple syrup and added Almond butter instead of Tahini and used Ghee(clarified butter - with is casein free) instead of grape seed oil.



Preparation Time - 10 Minutes

Cooking Time - 10 Minutes

Serves - (Makes around 12-15 Cookies depending on the size)



Ingredients



Almond Flour - 1 1/4 Cup



Salt - 1/4 Tsp



Baking Soda - 1/2 Tsp



Maple Syrup - 1/4 Cup



Almond Butter - 1/3 Cup



Clarified Butter - 1 Tablespoon



Vanilla extract - 1 Tsp



Sesame seeds - 1/4 Cup
Method



1.In a large bowl, combine almond flour, salt and baking soda





2. In another bowl blend Maple syrup, Ghee, vanilla extract and Almond Butter to a smooth paste.



3.Combine the dry ingredients with the wet ingredients.



4. Preheat Oven to 350 degrees Fahrenhiet.



5. Roll the dough into 1 inch balls and roll in the sesame seeds



6. Place on a parchment lined baking sheet and flatten and bake for 8-10 minutes until they become light brown.



7.Cool and store in a airtight container. Keeps good at room temperature for atleast a week.

Home Made Healthy Multigrain Graham Crackers



Know what you Eat – Graham Crackers comes under the list of healthy snacks but if

you read the ingredients most of them are made with partially hydrogenated oils and

very few are made with whole grains. Typically to make graham crackers one has to use

graham flour which is made by grinding finely the endosperm of winter wheat. The bran

and germ layers are returned and mixed in, resulting in a coarse, brown flour with a

nutty and slightly sweet flavor. Today, some commercial granaries remove much of the

wheat germ to prolong the shelf life of the flour. So most of the brands available in the

store all you get is stripped out and processed graham cracker.



Graham cracker was in my must bake list for a long time and instead of just going for

whole wheat flour, i used whole wheat, brown rice, oats, sorghum and coconut flour.

Yeah my pantry has you name it will have it kind of different flours stocked, so went for

this multigrain and was planning to bake a vegan version but the coconut flour absorbed

all the moisture, so had to add some milk to roll the dough and cut out the crackers.

Yes it did taste good.







Ingredients

Whole Wheat Flour – 1 1/2 cups

Oats Flour – 1/2 Cup

Brown Rice flour – 1/4 cup

Coconut flour – 1/4 cup

Barley flour – 1/4 cup

Sorghum flour – 1/4 cup

Baking powder – 1/2 tsp

Canola or Sunflower oil – 1/2 cup

Maple syrup – 1/2 cup(Make it 3/4th cup if you want it sweeter)

Salt – 1/4 tsp

Ener-g Egg replacer – 1 1/2 tsp

Warm Water – 1 Tbsp

Milk – 1/4 cup

Cinnamon powder – 1 tsp



Method



1) Mix all the dry ingredients – Whole wheat flour, oats flour, brown rice flour, coconut flour

sorghum flour, barley flour, baking powder, salt and cinnamon powder.

2) Add water to the egg replacer and beat till fluffy.

3) Now add the oil, maple syrup to the ener-g mixture and combine thoroughly,

now add all the flours to this mixture and combine to get a well moistened dough.

4) Preheat baking oven to 350 Degrees fahrenheit.

5) Because you are using coconut flour it will start absorbing the moisture, so keep 1/4th of cup

of milk handy. Take half the dough and add little bit of milk and roll out into a  1/8” thick

on a greased and floured baking sheet. Cut into desired shapes with a knife or a cookie

cutter. I just used knife and cut out square and rectangles.

6) Bake in a cookie tray lined with parchment paper for 8-10 minutes till they are golden.

7) Now flip them back and bake for another 3-4 minutes to make it really crisp.

8) Once completely cooled, store in a air tight container

9) I had these crackers for 4 days in room temperature and  made a no bake chocolate cake

with the remaining graham crackers, so not able to tell you the shelf life of these crackers.

10) Do the same to the remaining dough, because of the coconut flour you had to keep

adding little milk as when rolling out the dough. Repeat procedure from 5-7.



Notes – I came across this recipe from a magazine in the local library,which had used 3 cups of

Whole wheat graham flour, because i had so much of all these other flours i combined all of them. This

is the first time i am making crackers with coconut flour, when using coconut flour

it just absorbs all the moisture and make it dry so i had to keep on adding milk to

roll out cut into desired shapes. Next time when i am making i am planning to add

finely ground almond meal. The original recipe uses honey, whereas i substituted it

with maple syrup.

Eggless Whole Multi Grain Thumbprint Cookies

How to make eggless thumbrint cookies
Thumb print cookies are not only feast to eyes but to the mouth too. When i saw this recipe in Eatingwell.com i wanted to try out immediately. I modified it slightly to suit my needs. Instead of using white flour this recipe uses Whole wheat, Oats, protein rich Almonds. The cookies are eggless, no white sugar, no butter and they are vegan. With not the usual ingredients in them, but they taste absolutely delectable. Do try out and let me know.



Preparation Time - 10 Minutes

Cooking Time - 15 Minutes

Makes around - 20 Cookies



Ingredients



1 cup whole almonds

1 1/2 cups whole-wheat pastry flour

1/2 cup oat flour

2 teaspoons baking powder

1/4 teaspoon salt

Sunflower Oil - 1/3 cup

Maple syrup - 3/4 Cup

1 teaspoon vanilla extract

Raspberry preserves - 1/3 Cup



Method



1. Preheat oven to 350°F. Line a baking sheet with parchment paper

.

 2. Process almonds in a blender until finely ground. Transfer to a large bowl and add whole-wheat flour, oat flour, baking powder and salt. Whisk oil, maple syrup and vanilla extracts in a medium bowl. Add the wet ingredients to the dry ingredients; stir to combine. Use your hands to knead the dough together.



3. Form level tablespoonfuls of dough into balls and place on the prepared baking sheet about 2 inches apart. Gently flatten each ball into a disk, then make an indentation in the center using your thumb or a small spoon. Place 1/4 teaspoon preserves in each of the indentation.



4. Bake the cookies, one batch at a time, until golden around the edges, 15 to 17 minutes. Transfer to a wire rack to cool completely and store in a airtight container.



5. My cookies were good for atleast 5 days in room temperature and after that i didn't have any left to store longer.

Eggless Vegan Whole Wheat & Oats Peanut Butter Criss Cross

Cooking with unrefined flours are not that difficult and also they taste great with the mix and match of these ingredients. With the added protein from the peanut butter and fiber from the whole wheat flour and Oats, they are a good after noon snack. Better than a store bought one with all the refined flours, sugars and additives.





Preparation Time – 15 Minutes

Cooking Time – 15 Minutes

Serves – Makes around 18 Cookies






Ingredients

3/4 c Whole wheat flour

3/4 c Whole Oat Flour

1/2 Tsp Salt

1/2 Tsp Baking Soda

1 Cup Organic Smooth Peanut Butter

1/2 Cup maple syrup

1 1/2 Tsp Ener-g Egg Replacer

1 Tsp Vanilla

1 Tbsp Warm Water



Method

1) Combine the whole wheat flour, oat flour, salt and baking soda.

2) In a wide bowl, add warm water to the ener-g egg replacer and beat it till frothy.

3) Now add the maple syrup, peanut butter and vanilla extract to this mixture and combine to a smooth paste.

4) To this paste add the flour mixture and mix thoroughly without any lumps.

5) Preheat oven to 350 degree Fahrenheit. Line a cookie tray with parchment paper and make a small lemon sized ball out of the dough and flatten it using your palm.

6) Using a fork do a criss cross to get nice lines.

7) Bake at 350 degrees for 12-15 degrees till they are thoroughly baked.

8) Remove it out of the parchment paper and cool them in a wire rack and store in an airtight container once it is completely cooled.

9) Keeps good for at least a week without refrigeration.

Eggless Gluten free Oat & Almond Ginger Bread Cookies with no refined sugar

Know what you Eat - Almonds are low in saturated fat and contain many other protective nutrients - protein, calcium and magnesium - for strong bones, vitamin E and compounds called phytochemicals, which may help protect against cardiovascular disease and even cancer. Oats are an excellent source of iron, dietary fiber and thiamin. They also contain antioxidants that are believed to protect the circulatory system from diseases such as arteriosclerosis, which affects the arterial blood vessel.

My kids love cookies, but one thing which scares me is the increased chance of cavities apart from all the other health problems when consuming refined sugar. This is one more experimental attempt by me to create a nutritious cookie without any refined flour, and by adding maple sugar, molasses and using xylitol(for icing) in place of refined table sugar.  This was a sure hit among mine as well their friends.

Preparation Time - 15 mins
Cooking Time - 10 to 15 mins
Makes around 6 to 8 cookies

Ingredients

Gluten Free Oats Flour - 1 cup
Almond Flour - 1/2 cup
Clarified butter(ghee) - 1/8 cup
Honey - 1/8 cup
Molasses - 1/8 cup
Baking powder - 1/2 tsp
Grated ginger - 1 tsp
Cinnamon powder - 1 tsp
Salt - 1/4 tsp

Method

1) Combine the Oats flour, Almond flour, salt, cinnamon powder and baking powder.
2) To this add clarified butter, honey, molasses and grated ginger.
3) Roll the dough and take a small ball and flatten it.
4) Using a cookie cutter cut out the desired shapes.
5) Pre heat an oven to 350 degrees Fahrenhiet.
6) Line a cookie tray with parchment paper and bake the cookies for 10-15 minutes till they are fully baked.
7) Once the cookies are well cooled stored in an air tight container.

For the icing

Cream Cheese - 2 Tbsp(Organic without animal rennett)
Butter - 1 Tbsp
Xylitol(powdered) - 2 tsp or to your taste

1) Beat the cheese and butter, to this add xylitol.
2) Fill a ziploc with the icing and decorate the cookies.

Glutenfree Eggless Oats & Almond Candied Fruit Cookie

Know what you Eat - Gluten is a special type of protein that is commonly found in wheat, barley, rye, kamut, spelt and triticale, but unfortunately most oat stock has been found to be contaminated with wheat because of processing methods. But you can find gluten free Oats in your health food store or online. These contain oat gluten but not the type of gluten that can harm people with Celiac disease or gluten intolerance.

Now coming to the nutrition in these cookies Almonds are low in saturated fat and contain many other protective nutrients - protein, calcium and magnesium - for strong bones, vitamin E and compounds called phytochemicals, which may help protect against cardiovascular disease and even cancer. Oats are an excellent source of iron, dietary fiber and thiamin. They also contain antioxidants that are believed to protect the circulatory system from diseases such as arteriosclerosis, which affects the arterial blood vessel. Preparation Time - 20 mins





I stick on to Oats because of their high fiber content and Almonds because of its high nutritional content. The cookies being a part of my kids daily snack , i no longer need to feel too guilty to give something with empty calories and they taste great too.





Cooking Time - 20 mins

Makes - Around 30 Cookies



Ingredients



Oats  Flour - 3 Cup

Almond Flour/Meal - 1 1/2 cup

Butter - 3/4 cup(room temperature)

Raw Sugar - 1/2 cup + 2 tbsp (if you want a more sweeter version otherwise keep it to 1/2 cup)

Tutti Fruity(Candied Fruit) - 1 cup

Almond Extract - 1 tsp

Baking Soda - 1/2 tsp

Salt - 1/4 tsp



Method



1) To get Oats flour in a food processor grind the Oats to fine flour consistency.

2) Add 1tsp of sugar to the Almond and grind to a fine powder, adding the sugar will prevent the almond flour from becoming sticky.

3) Combine the Oats flour, Almond flour, Salt, baking soda and the candied fruit pieces.

4) Cream the butter and sugar together and add the almond extract to it.

5) Slowly add the Oats and Almond flour to the butter, sugar mixture and make a dough.

6) Preheat an oven to 350degrees Fahrenheit.

7) Line a cookie tray with parchment paper.

8) Take a small amount of the dough, roll it and flatten it with hand.

9) Place them in the cookie sheet leaving enough space for the cookies to expand.

10) Bake for around 10-15 minutes till they are slightly brown and completely baked.

11) Cool them completely(this is must as they will be very crumbly even to touch) and transfer them to an airtight container.

Almond Oats Chocolate Chip Cookie(Eggless)

Oats are an excellent source of iron, dietary fiber and thiamin. They also contain antioxidants that are believed to protect the circulatory system from diseases such as arteriosclerosis, which affects the arterial blood vessel.





Our doctor is firmly believes in a grain free diet,  he advises us to stay away from Rice and Wheat(even whole wheat) as they are fattening. He sketched out a diet plan for us which consist of Finger Millet(Reinventing the wheel), black chick pea, green mung bean and Quinoa. Our staple brown rice and whole wheat(even though i love them i use it occassionally now) has been taken over by other grain & beans in the past few years. Being the staples replaced, now i am slowly working on replacing wheat with other grains in my baking too. This is one such cookie and it gave me lot of satisfaction as it contains the goodness of Oats and protein rich Almonds. Almonds are concentrated in protein. A quarter-cup contains 7.62 grams-more protein than is provided by the typical egg, which contains 5.54 grams. I tried using Almond flour(my ultimate target) alone and the taste was unmatched, but they were lot crumbly.



Preparation Time - 10 mins

Cooking Time - 10-15 mins

Makes - 18 to 20 Cookies

Ingredients



Oats Flour - 2 Cups

Almond Powder - 1 Cup

Semi sweet Chocolate chips - 4 oz (1/2 cup)

Butter - 4 oz(room temperature)

Agave Nectar - 2 oz

Baking Soda - 1/4 tsp

Salt - 1/4 tsp

Vanilla extract - 1/2 tsp



Method



1) Preheat Oven to 350 degrees Fahrenhiet.

2) Sift Oats, Almond flour, Baking soda, salt and chocolate chips and set them aside.

3) Combine Butter and Agave nectar and then add the vanilla extract.

4) Now add the Oats-Almond mixture slowly to the butter and combine without any lumps.

4) Line a baking tray with parchment paper.

5) Take small amount  of dough, make a ball and flatten them using your hand and place it in the parchment paper.

6) Leave enough space as the cookies will expand while baking and bake for around 10-15 minutes till they are slightly brown and completely baked.

7) Cool them completely(this is must as they will be very crumbly even to touch) and transfer them to an airtight container. Great for kids as a guilt free snack along with some fresh fruits.



Note - I have tried these cookies couple of times, it comes out very well. The consistency of the dough depends on the room temperature. Once i baked them on a very hot day and had to spoon the dough instead of flattening them, still it comes out well. I have tried the vegan version also with 1/2 cup of Canola oil and replacing agave nectar with 1/2 cup Maple syrup. With Maple syrup they are little bit on the crispy side.

Nutritious Oats and Peanut Butter Cookie

Know what you Eat - Contrary to what their name implies, peanuts are not true nuts but a member of a family of legumes related to peas, lentils, chickpeas and other beans. Peanuts are a very good source of monounsaturated fats, the type of fat that is emphasized in the heart-healthy diet. Studies of diets with a special emphasis on peanuts have shown that this little legume is a big ally for a healthy heart. Peanuts contain oleic acid, the healthful fat found in olive oil and are rich in antioxidants. Roasted peanuts do rival the antioxidant content of blackberries and strawberries, and are far richer in antioxidants than apples, carrots or beets. Oats are an excellent source of iron, dietary fiber and thiamin.

It is summer break for the schools now. Kids when at home, like to snack more than eat proper meals. I know every Mom has to scratch her brain to come up with healthy snack ideas and i came up with this one. It was little sweet for me, but was great hit amongst the kids.

Preparation Time - 10 mins
Cooking Time - 15 mins
Serves - Makes 12 cookies

Ingredients


Quick Cooking Oats - 2 cups
Peanut Butter - 1/2 cup
Honey or Maple Syrup - 1/2 cup
Canola or Sunflower oil - 1/4 cup
Salt - 1/2 tsp
Cinnamon powder - 1/2 tsp
Baking Soda(aluminium free) - 1/2 tsp
Chocolate chips or nuts - handful

Method

1) Take 1 cup of Oats and grind into a flour in your blender.
2) Toast 1 cup of Oats slightly till the raw smell is gone.
3) Combine Salt, cinnamon powder, baking soda, Oat flour, Quick Cooking oats thoroughly.
4) Now add peanut butter, maple syrup, oil to the above mixture and knead into a dough.
5) Roll into small balls and flatten them into circles using the center of your hand.
6) Preheat oven to 350 degrees.
7) Place parchment paper in a baking tray and place the cookie one by one leaving enough space to expand.
8) On top of the flattened dough place chocolate chips, nuts etc of your choice and bake for around 10 minutes.
9) Once baked remove it from the oven and let it cool completely as they will be soft and crumbly when hot.
10) Store in an airtight container and enjoy.

Oats-Almond Meal Cookies with Strawberry Filling

My Uncle passed on this recipe from some Online Vegan forum, ever since i got this recipe i have baked these several timeswith different combination of fruit spreads. It just comes out very well and the best part is it doesn't have all purpose or evenwhole wheat and has the goodness of Oats and Almond with out compromising on the taste. I am trying various variations with this base recipe using Pistachio ,Cashew etc. If successful will post soon.


Cooking Time - 15 mins
Preparation Time - 10 mins
Yields - Around 18 cookies(depends on the size you make)

Ingredients

Oats(Quick Cooking not instant oat meal) - 2 cups and 1/4 Cup
Almonds - 1 cup
Honey - 1/2 cup
Strawberry spread/jelly/preserves - 1/2 cup( Or any fruit of your choice)
Sunflower/Canola Oil - 1/4 cup(2 oz)
Salt - 1/2 tsp
Cinnamon powder - 1/2 tsp

Method

1) Measure 1 1/4 cup of Oats and grind into flour in the processor.
2) Transfer all the almonds to a food processor and grind into a powder, this need not be a fine powderbut can be little coarse Almond meal.
3) Combine the grind Oats, Almond and the rest of the ungrind Oats, Salt and Cinnamon powder
4) Add Oil, Honey and mix thoroughly and form a dough.
5) Preheat Oven to 350 Degrees Fahrenheit.
6) Grease a cookie tray
7) Roll the dough into small balls and flatten them in your hand, make a small depression in the middle andplace them in the cookie tray one after another leaving enough space between the cookies as they will expand.
8) Fill the centers with Jelly of your choice.
9) Bake for 10-15 minutes until well baked, they get baked quickly so keep a watch on them otherwise you will get brown or burnt cookies.
10) Cool them and transfer to a airtight container. They are sweeter the next day.

Note - The original recipe uses Maple syrup, when using maple syrup use 1 cup of Oats flour and 1 1/4 cup of Oats.When using honey the texture becomes little soft and crumbly so i tried to change the proportion and it did work well.The original recipe uses 1/2 cup of jelly, i make it 1/4 when making for our family as this 1/2 cup is too sweet for us. But if you have a sweet tooth this
1/2 cup will be just right or may not be enough.
